I love spaghetti squash. It has such a light, sweet flavor and the texture can't be beat as a substitute for pasta. Nate and I eat is more then once a week and it's delicious. Though there are several ways to prepare it, my favorite (due to its ease) is to quarter it and put it in my food steamer. In 30 minutes it's perfectly cooked. I shred it onto a plate with a fork, add flaxseed oil, salt and pepper and indulge. It's also very good with a hearty spaghetti sauce.
